This recipe was a huge hit with my family, especially my husband and oldest son. They couldn't get enough of it.
I have been trying to eat healthier lately and I am following Clean&Delicious.com. On her YouTube channel she shared this recipe:
Mint Chocolate Chip Ice Cream
We didn't have semi sweet chocolate chips, those are a bit healthier. I would recommend you use those.Beckyhttp://www.blogger.com/profile/16403185773747561939noreply@blogger.com0tag:blogger.com,1999:blog-3479620876309877711.post-52280348949656706162014-11-03T07:35:00.004-08:002014-11-03T07:36:47.013-08:00Crockpot Chili for Halloween Night
This recipe turned out so yummy! Secret Ingredient: Just a kick of Cinnamon
There's nothing like a warm meal on a cold night!

Yesterday I made some homemade tomato sauce (onions & garlic saut'ed on the stove, then I added tomatoes blended in the blender, tomatoes diced and placed in the pan, and I added salt, pepper, and Italian seasoning) and I also had leftover chicken. I decided to make these.
We have been trying to eat extra healthy lately, it just helps us feel so much better. This bread is delish! This is one of my favorite recipes. My family & friends devour it!
I like to grind my own wheat in my dry Vitamix blender. It makes it more nutritious. But, you can certainly just use whole wheat flour and be good to go.
I tripled this recipe, and as you can see in this picture...it made 3 LARGE loaves. So, this recipe tripled would make 4 good sized Beckyhttp://www.blogger.com/profile/16403185773747561939noreply@blogger.com0tag:blogger.com,1999:blog-3479620876309877711.post-86609081492734980992014-09-13T19:10:00.001-07:002014-09-13T19:11:03.328-07:00Vegetable Coconut Curry over rice
We love Curry at our house. So, I thought I would make it tonight for dinner. It was delicious!
This is just vegetables, but you can also add chicken, lamb, pork, or any other meat you would like.
Chop up you favorite veggies into bite sized pieces. I added: Red onion, cauliflower, cabbage, carrots, red pepper, bell pepper, and potatoes.

This was yummy, moist, tempting, and delicious!
I found the recipe at jugglingactmama.com. I didn't use the chocolate tidbits. I just decided to frost it instead.
My frosting I used was:
1/4 C. butter
2 Tbsp. cocoa powder
1 1/2 C. powder sugar
1 Tbsp. evaporated milk
Whisk like crazy and pour over cake when done.
I also made mine in a bunt pan.

Every time we go "back home" to my husband's parent's house his Mom makes Rice Pudding. It is warm, creamy, and nostalgic. Our kids love it!
I made her recipe and it was good, she makes it just right and it is delicious!
But, here are a few things I discovered how I like it....
I like the recipe where you add the cooked rice to the pot first, then add the milk, eggs, etc. to the potBeckyhttp://www.blogger.com/profile/16403185773747561939noreply@blogger.com0tag:blogger.com,1999:blog-3479620876309877711.post-31639653169040481382014-08-28T20:20:00.002-07:002014-08-28T20:20:50.245-07:00Peach Coconut Sticky Rice
Whenever I go to a Thai restaurant I order the Mango Coconut Sticky Rice dessert. I knew I wanted to make this for dessert for our back to school feast, and even bought mangoes. But, I decided to use peaches instead. They are a little easier to prepare. This was delicious!! I will definitely make it again. It was so easy too!

The other night, (the night before the 1st day of school) we had an oriental feast. It was soooo good! My mouth waters just thinking about it. Today was my kids' first day of school and I wanted to have a delicious snack waiting for them when they got home. These Pumpkin pancakes turned out so delicious! Do you know what else would make them even more delicious? Chocolate chips. I ran out. :(
My pumpkin pancakes have always been a little on the doughy side, until I found a recipe from Six Sisters Stuff. They added a secret ingredient to help them not be doughy...pancake mix. So, I made up my own recipe from that idea.

I love to grill my fruit on the stove, it gets so juicy and yummy! Add some butter & brown sugar and make a caramelly goodness and it's even better. This time of year we get a lot of peaches, just because they are so plentiful around these parts, and we love them! So, I am always getting creative and coming up with peach concoctions in the kitchen. Enjoy!

Our family likes to have this for our "hot cereal" every once in a while. I couldn't resist, we keep our cornmeal on our counter top in a large Mason Jar. The color is so yellow! We get ours from Honeyville Grain.

This afternoon I was looking in my fridge for something to make for lunch that would be quick. This is what I came up with....
Slice your bread (I used black pepper artisan bread I had gotten off the sale rack at my local grocery store).
Top each slice with 1 Tbsp. Honey Barbecue Sauce, spread around so it coats most of the top.
Top each slice with 2 slices of ham (I just used Beckyhttp://www.blogger.com/profile/16403185773747561939noreply@blogger.com0tag:blogger.com,1999:blog-3479620876309877711.post-24625963174399463922014-08-15T19:17:00.001-07:002014-08-15T19:59:30.052-07:00Oatmeal Cookie in a Cup

1 C. rolled oats
1/2 tsp. cinnamon
6 dates or 1/4 C. raisins
