I have been making a lot of cookies and freezing them for this holiday party I am having. These were so yummy, I am glad most of them made it to the freezer (if you know what I'm saying?).
In a large bowl combine:
2 boxes of chocolate cake mix
4 eggs
2/3 C. oil
When mixture forms a large ball, break off small ping pong ball shaped pieces and place on a cookie sheet about 2 inches apart from each other.
Bake at 350 for 8-10 minutes. Let rest on baking sheet for 3-5 minutes, then cool on a cooling rack for about 10 minutes. Then add frosting in the middle of two of the same size cookies with right side out.
Lemon frosting:
2 Tbsp. softened butter
1/2 C. cream cheese
2 1/2 C. powdered sugar, or enough to make the right consistency that you want
1/2 tsp. lemon extract
few drops of yellow food coloring
Raspberry frosting:
Same as lemon frosting but add raspberry extract instead of lemon and red food coloring instead of yellow.
After frosting let set up for at least 1/2 hour.
