Raw Vegan Coconut Cream & Blueberry Cheesecake


This cheesecake is so rich & delightful. You will love it! 

Crust:
In the food processor or blender add:
1/2 C. walnuts
1 1/2 C. pecans
2 C. dates
Pulse.
Press into pie dish.

"Cheese" filling:
3 C. cashews (soaked for at least an hour)
1/4 C. maple syrup (or natural sweetener of choice)
1/4 C. lemon juice
1 tsp. coconut extract
1/4 C. coconut oil
1 C. shredded coconut, unsweetened 
Process in blender (I used my Vitamix).
Pour into Crust.
Place in fridge for 3 hours. Or for a firmer consistency, place in the freezer for 2-3 hours. 

Topping:
2 C. blueberries (or fruit of choice. You could use cherries, strawberries,blackberries,etc.)
1/2 C. dates
Blend in blender or food processor. Pulse for a chunkier consistency.
Pour over chilled cheese. 
Serve.

Peach Coconut Sticky Rice




Whenever I go to a Thai restaurant I order the Mango Coconut Sticky Rice dessert. I knew I wanted to make this for dessert for our back to school feast, and even bought mangoes. But, I decided to use peaches instead. They are a little easier to prepare. This was delicious!! I will definitely make it again. It was so easy too!

In the rice cooker add: rice, coconut milk, sugar, coconut oil, and salt. Cook on the white rice cycle.
On the stove put coconut milk & sugar in a pot and boil for 5 minutes. 


When rice is done add coconut/sugar mixture to it, stir, and cook on white rice until done. (Don't forget to save about 1/8 C. of coconut/milk mixture for drizzling over top before serving.

Slice peaches. They look best with skins removed.


For ease add peaches right on top, or for presentation place peaches nicely on top of each serving dish.
(I put my rice in a small bowl first, pressed on it a bit and plopped it upside down on the plate. Looks great that way. 



Recipe:
Cook in rice cooker on white rice setting:
1 1/2 C. sushi rice
1 C. water
1 C. coconut milk
2 Tbsp. sugar
2 Tbsp. coconut oil
Dash of salt
Stir. 
In a pot on the stove add:
1 Can coconut milk
1 C. sugar
Whisk and boil for 5 minutes.
Reserve about 1/8 of a cup of coconut/sugar mixture for drizzling over end product. 
Pour over rice when rice is done. Stir. Cook on the white rice setting one more time. (It can be cooking while you eat your dinner! :)
Top with peaches, drizzle with sauce.

"Grilled" Peaches

 I love to grill my fruit on the stove, it gets so juicy and yummy! Add some butter & brown sugar and make a caramelly goodness and it's even better. This time of year we get a lot of peaches, just because they are so plentiful around these parts, and we love them! So, I am always getting creative and coming up with peach concoctions in the kitchen. Enjoy!


In a non stick pan on the stove over medium heat add 1 Tbsp. Butter


Add 7-10 pitted halved peaches face down
Sprinkle with 2 Tbsp. Brown Sugar


Cook for about 10 minutes
Turn over with a fork and cook for another 10 minutes


Place in a bowl and serve with whipped cream or ice cream (We used Caramel Pecan Ice Cream! Delish!)
You can also drizzle some of the extra sauce from the pan over top. 


Last night I thought of another idea that you could do with this recipe. You could slice the peaches and cook them the same way with butter & brown sugar. Then you could have it as a topping for ice cream. Oh Wow! Now that sounds good!

Very Berry Smoothie

We had this Very Berry Smoothie this morning along side our Rice Pudding.
It was really good, it hit the spot!


In a blender add: 
2 C. water 
1 C. ice 
3 large peaches 
10 strawberries
1 1/2 C. blueberries
2 C. spinach 
1 C. yogurt.

Afternoon Energizer


This drink is so refreshing. You should try it!

In a blender add:
2 C. water
1 C. ice
1/2 C. carrots
1 C. cantaloupe
2 bananas
1 C. watermelon
2 C. spinach
1 C. yogurt

Blend.

Caramel Apple German Pancakes

So, in my mind I like to create recipes before I get to sleep. This is the one I came up with last night. These are delicious! 


Preheat the oven to 425*.  In a 9X13 pan put 3 tsp. butter. Put in the oven until melted.


In a large mixing bowl add: 1 1/2 C. flour, 2 Tbsp. cornmeal (optional), 1 Tbsp. 9 grain cereal mix (optional), 1 1/2 C. milk (I use 1 (12 oz) can evaporated milk), 1 Tbsp. sugar, dash of salt, 1 tsp. vanilla, and 9 eggs. Whisk until smooth. You can also make this in a blender.


Take butter out of oven add 1 Tbsp. Coconut Oil.


Chop or dice 1 large apple (I used red delicious).


Pour batter into hot buttered/oiled pan. Sprinkle with apples. 


Place in the oven. Bake for 20-25 minutes, or until edges are golden brown, or the middle will be doughy. 



Let sit for 5-7 minutes, slice with a sharp knife (to get even slices...slice in half length wise and half width wise, then cut those sections in half, and in half again until you have as many pieces as you would like). 

Top with caramel sauce.

Caramel sauce:
In a pot on the stove over medium heat add:
2 Tbsp. butter, 1/2 C. brown sugar, and 1/4 C. water. (I doubled mine and stored left overs in the fridge).
Boil for about 5-10 minutes, stirring often.


Serve with my Sunrise Smoothie.

Sunrise Smoothie


This is another great one! It's great to wake up to such a delight!

Ingredients:

2 1/2 C. orange juice (or 1/2 C. orange juice concentrate & 2 C. water)
2 bananas
2 C. frozen mango chunks
1 C. strawberries (I leave the stems on)
2 C. peaches

Blend, enjoy, share with friends or family!

Grapefruit


 My Mom taught me how to cut and eat a Grapefruit and I am now teaching my kids.  We ate them a lot growing up. 
They are so good for you and have a lot of Vitamin C in them. I got these 3 for a $1 at my local grocery store. 
They make a great breakfast!
So, most of you know how to cut and eat a Grapefruit. But for those of you who don't....

Cut in half



Place in bowl


Cut around the outside of the fruit



Cut out each section, on both sides


Sprinkle with sugar


Eat with a spoon


When you have eaten all the fruit out of the rind, squeeze the juice into a bowl. 



Drink up, it's delicious!

Peach Dream Smoothie

It is peach season and I love using peaches, freezing peaches, and hopefully I will get around to canning peaches. Here is a yummy, creamy creation of mine. 

Ingredients:
2 C. ice
1 C. water
2 C. Almond Milk
3 peaches
6 dates
2 bananas
1 C. yogurt, any flavor (I used Key lime)

Fruit burst Salad


This salad is so refreshing! Great as a side dish, and a compliment to any meal.

Ingredients:
Sliced Peaches, Watermelon, and strawberries.
Add yogurt. (In this recipe I added raspberry flavored, it tasted so good!)
Stir
Store left overs in fridge.

Orange Julius

 This morning we had Bananas Foster waffles and orange Julius! Delicious!

I made this in my Vitamix Blender
Ingredients:
2 C. water
2 C. ice
2 bananas
1/2 C. frozen orange juice concentrate
1 C. peach yogurt (You can use any flavor of yogurt)
2 C. almond milk

Blend. Enjoy!

Bananas Foster Waffles

This recipe tasted amazing this morning! I would highly recommend it for breakfast this morning! 
Waffle ingredients:
2 eggs
2 Tbsp. sugar
1/2 C. sour cream
2 C. milk + 2 Tbsp. Vinegar
2 Tbsp. coconut oil or butter
2 C. flour
1 Tbsp. Baking powder
Dash of salt
1 tsp. vanilla 

Whisk ingredients together until smooth. Ladle into a buttered hot waffle iron until brown and crispy. 

Caramel syrup ingredients:
1/4 C. butter
1/2 C. water
1 C. brown sugar

Boil for about 5-7 minutes in a nonstick pot. 

Bananas
Slice and place in a bowl. Top with lemon juice to keep from browning. 

When all is ready...top waffles with bananas, then drizzle caramel syrup over top. 

Enjoy!

Frozen Bananas & Banana Ice Cream




One of my favorite summer treats is Frozen Bananas. I wait until they are really ripe on my counter (with lots of spots). Peel them, place them all on a cookie sheet, and pop them into the freezer. Then the next day I put them in a ziplock bag in the freezer, ready to eat. (I like to hold the banana in a paper towel while I eat it).

There is something that happens to bananas when they get frozen, they become extra creamy in their texture and flavor. Yummy!

I also like to make banana "nice cream" with my frozen bananas. I used to have such a hard time making banana ice cream out of my frozen bananas in my Vitamix, because they wouldn't blend that well. But, Kristina from Fullyrawkristina gives a great tip. Put a soft unfrozen fruit in the blender first then add the bananas. You could use peaches, pears, pineapple, etc.

You also have to use the wand that comes with the Vitamix. This is one of my families favorite desserts, and it's healthy! Bonus!
