BBQ Chicken Pizza

This is a great freezer meal found over at fabulesslyfrugal. My friend Amy made it for our freezer group this month. I am so looking forward to trying this. Yummy!

Amy said, "For the crust, I used Rhodes bread dough.  I didn't use cilantro and also added green peppers, bacon bits, and pineapple."

Mini Bagel Pizzas

We just had these today for a quick lunch.

Ingredients
8 mini bagels, pre-cut
Cheddar cheese, cut into small squares
Pepporoni
Place pre-cut bagels on cookie sheet.
Top with cheese squares, then pepporoni
Broil in the oven for about 4 minutes. (Keep an eye on them so they won't burn).
The blueberry ones tasted the best!

Serve with a salad.

Chicken Ranch Pizza

This pizza is delicious! My friend Cara told me about it. You should definitely try it.

What you do:
Make a pizza crust
Mix 1 C. ranch dressing with 1 can Rotel. (If you don't want spicy, just omit the Rotel)
Spread over crust.
Top with:
2 grilled chicken breasts (1 per pizza), seasoned with salt and pepper, cut or torn into bite sized pieces.
Pizza cheese or Mozzarella, (as much as you would like)
Bake at 450 degrees for about 12 minutes or until golden brown.
Top with fresh tomatoes and cilantro when out of oven.
Makes about 2 large pizzas.

"We love it!"

Becky's friend

I also added some bacon. My husband loved it and he doesn't really like Ranch. He suggested we use Alfredo Sauce. I liked white sauce for a change.

Pizza Cups

The other night for dinner I wanted to make something that wasn't too messy. We ate downstairs and I didn't want our dinner to get all over. So, I made these.

In a bowl add:
2 C. warm water
1 Tbsp. yeast
1 tsp. sugar
1/2 tsp. salt
2 Tbsp. oil
Flour, enough to make a workable dough.

Knead on a greased counter.
Let rest.
Heat oven to 375.

Pinch off ping pong ball size balls and press into greased muffin pan.

In the well of each muffin add:
Tomato sauce
Cheese
Pepperoni
And any other desired toppings.

Make sure to add a lot of toppings on the inside, these expand in the oven and the dough takes over.

Bake for about 15 minutes or until golden brown

I thought these would be great dipped in ranch.

Serve with a side salad.

Careful they are hot right out of the oven!
