Breakfast Sandwiches

My friend and I have been into freezer meals and this morning we decided to just focus on breakfasts. Mornings get busy, especially during the school year. It's hard not to just have cereal every morning.
We have been using ideas from a few different cook books and then just making the recipes our own. With these I thought it would be best to bake the eggs, so they could hold their shape better.
For the eggs:
Put 8 eggs in a bowl, add about 1 C. milk, a dash of salt and pepper and then scramble with a whisk.
Pour them in a well greased 9X13 pan and bake at 350 for about 20 minutes, or until light brown around the edges. Cool a bit, then cut into 8 equal squares.
Toast either english muffins, bagels or biscuits (while eggs are cooking).
Slice cheese.
How to arrange:
Get one half of your bread and put the egg on the bottom. Then layer with cheese and last you put the meat on top (which needs to be precooked). You can use sausage, ham, etc.Then top with the other half of your bread.
Wrap each sandwich individually in foil and freeze in a few ziplock bags, or just in your freezer alone.

When you are ready to cook them, thaw out in the fridge and cook at 400 degrees in your oven for about 20 minutes. These are so yummy! It was hard not to eat at least one while making them.
You can unwrap them when frozen and cook in the microwave, but they may be a bit soggy.
