Peach Coconut Sticky Rice




Whenever I go to a Thai restaurant I order the Mango Coconut Sticky Rice dessert. I knew I wanted to make this for dessert for our back to school feast, and even bought mangoes. But, I decided to use peaches instead. They are a little easier to prepare. This was delicious!! I will definitely make it again. It was so easy too!

In the rice cooker add: rice, coconut milk, sugar, coconut oil, and salt. Cook on the white rice cycle.
On the stove put coconut milk & sugar in a pot and boil for 5 minutes. 


When rice is done add coconut/sugar mixture to it, stir, and cook on white rice until done. (Don't forget to save about 1/8 C. of coconut/milk mixture for drizzling over top before serving.

Slice peaches. They look best with skins removed.


For ease add peaches right on top, or for presentation place peaches nicely on top of each serving dish.
(I put my rice in a small bowl first, pressed on it a bit and plopped it upside down on the plate. Looks great that way. 



Recipe:
Cook in rice cooker on white rice setting:
1 1/2 C. sushi rice
1 C. water
1 C. coconut milk
2 Tbsp. sugar
2 Tbsp. coconut oil
Dash of salt
Stir. 
In a pot on the stove add:
1 Can coconut milk
1 C. sugar
Whisk and boil for 5 minutes.
Reserve about 1/8 of a cup of coconut/sugar mixture for drizzling over end product. 
Pour over rice when rice is done. Stir. Cook on the white rice setting one more time. (It can be cooking while you eat your dinner! :)
Top with peaches, drizzle with sauce.
