Frog Eye Salad with Vanilla Pudding
I made this for a family barbaque yesterday and it was a big hit! I love it with the pudding.
1 16 oz. box Acini Di Pepe
2 C. strawberries, chopped
2 15 oz. cans fruit cocktail
1 15 oz. sliced peaches, chopped
1 lrg. box vanilla pudding
2 C. cool whip
2 C. minin marshmallows
1 C. shredded coconut
Cook Acini Di Pepe according to directions on the box. Drain well and rinse with cold water. Put in large bowl. Add strawberries, fruit cocktail, peaches, (and any fruit you think would be good). Mix pudding (according to directions on the box) in a separate bowl. Add to the rest of the ingredients. Add softened cool whip, marshmallows, and coconut. Chill for 2 hours. Serve.
I love this salad. My Grandma used to make this when I was a girl. I have feelings of Nostalgia while eating it. I can't get enough!
