Gluten-free pancakes









Gluten-free pancakes

1/2 C. rice flour
1/2 C. corn meal
1 Tbsp. sugar
1 Tbsp. milled flax seed
1 Tbsp. baking powder
1 egg
1/2 C. milk
1 Tbsp. oil
1 tsp. vanilla

In a bowl combine all ingredients. Stir until well incorporated. Use a small measuring cup, ladle into small circles and cook on both sides.

Serve with: syrup, jam, pureed fruit, yogurt, etc.
