Ginger chicken over rice

This was very tastey for a meal and very healthy. I served it over brown rice.

1 Tbsp. butter
2 Tbsp. olive oil
4 Chicken breasts
2 large carrots, chopped
2 Celery sticks, chopped
3/4 C. onion, chopped
2 Cloves garlic, crushed and diced
2 Tbsp. Vinegar
1 tsp. ground ginger
1/2 tsp. curry powder
Dash of Salt and Pepper

In a skillet heat up olive oil and butter. Put chicken breasts in and brown on each side. Add vegetables and cover. Cook until veggies are soft. Take chicken breasts out and cut into bite sized pieces. Add back in. Add vinegar, ginger, and curry. Cook until well incorporated. Add salt and pepper to taste. 

Serve over rice.
