Katrina's Orange Chicken

4 Chicken breasts
1 egg, beaten
1 Tbsp. water
1/2 C. cornstarch
2 Tbsp. margarine or butter

1 C. brown sugar
1/2 C. soy sauce
1 C. orange juice
1/2 C. vinegar

Cornstarch slurry:
2 Tbsp. cornstarch in 4 Tbsp. water


In two separate bowls add:
1. Egg wash made with beaten egg and water.
2. Cornstarch

Dip chicken pieces in egg mixture then cornstarch.
Melt margarine in a pan.
Add chicken and brown until golden brown.
Place in a shallow baking pan. (9X13)
Combine remaining ingredients in a pot on the stove (except corn starch slurry) and bring to a boil.
Add cornstarch slurry as needed for a thin sauce. Boil about 5-10 minutes.
Pour over chicken pieces and bake at 375 covered with tin foil for 20 minutes.
Uncover and bake an additional 15 minutes.

Yield: 4 Servings

Great with broccoli and over fried or white rice.
