1/8 C. water
1/2 Tsp. salt
Dash of black pepper
Whisk together thoroughly.
Pour into a greased skillet on the stove. Make sure it covers the whole bottom. With the spatula push in small strokes and fill in with raw egg until solid when you shake the pan back and forth. Does that make sense?
Cilantro or parsley
Dice all up individually and layer as you like on one side of omelet round.
Flip one side of the other, so it is folded in half.
Cover with lid and cook until cheese is melted.
Top with salsa.
