This is a great healthy alternative to some dips. You can eat it with chips, on chips, on eggs, in eggs, etc.
Ingredients:
1 can black beans, drained & rinsed
1 can corn, drained
1 lrg. tomato, diced
1 stalk celery, diced
2 cloves garlic, smashed & diced
1/4 C. purple onion, diced
1/2 tsp. salt
Dash of black pepper
2 Tbsp. cilantro, chopped
1 Tbsp. Lime juice
1/2 tsp. Italian Seasoning
Stir together well. Store in the fridge. Enjoy!
