This is one of my favorite recipes for caramel popcorn. I usually form it into balls and put them in cupcake liners for serving.
I get a big bag of Barrel O Fun Corn Pops (I bought mine at Wal-Mart)
Dump about 3/4 of the bag into a big bowl and then I make my caramel:
1/2 stick butter
1 C. brown sugar
1/2 C. light corn syrup
1 (14 oz) can sweetened condensed milk
Stir in a nonstick pot on the stove with a wooden spoon until it comes to 238 degrees F.
Take off stove and stir in:
1 tsp. Vanilla
Dump hot caramel over Corn Pops. Stir until well coated. You may butter your hands and form into balls (careful it's hot) or just put into bowls and enjoy. Cover the rest with plastic wrap.
