Tuna Patty


My husband's family has been making Tuna Patties for years. They take it with them in the cooler with them while they go water skiing. (That's the first time I had ever had Tuna Patty, when we were dating and went water skiing with Wes's Fam). It is good! Over the years we have tweaked it to our liking. Here is the recipe we have come up with....

In a large bowl add:
4 cans tuna
2 sleeves of Saltine crackers (crushed with hands before opening)
6 eggs
1 C. shredded cheese

Spices:
We like
1/2 tsp. Garlic salt
1/2 tsp. Italian Seasoning
1/2 tsp. Lemon Pepper

Mix until well incorporated.
Place 1/2 of the mixture into a frying pan. (We like to put 2 Tbsp. Coconut oil in a hot pan first). Spread in the pan and smash with a fork. 

To flip I like to slide it onto a plate (raw side up) and then flip the plate back into the pan. Cook until well browned.

I like to slice the giant patty with a pizza cutter and place into our tortilla warmer to keep it warm.
Serve with: Lemon Juice, hot sauce, or ketchup.
