Ebleskivers

After reconnecting with an childhood friend, I couldn't wait to ask her what those puffy ball shaped pancakes were that we would eat at her house for breakfast after a sleepover. They're Ebleskivers. A danish food. My family now loves them!
You need a special pan when making these. Luckily we had my son's pancake puff pan that he got for Christmas a few years back.
Here is the recipe:
Mix the following together:
3 egg yolks
2 Tbs. sugar
1/2 tsp. salt
2 C buttermilk
Add to the following mixture:
2 C flour
1 tsp. baking soda
1 tsp. baking powder
Then fold in last:
2 egg whites whipped until stiff
Put a spoonful of batter into each cup. Cook on medium heat. Use a toothpick or a shish kabob stick to flip.
Top with whatever you prefer. Melted butter, powdered sugar, maple syrup or yogurt, for example.
