I like to make this Chili when it is starting to get cold outside. It is also great on scones with a little cheese on top.
In a pot on medium heat put:
2 Tbsp Olive Oil
1/2 C. onions, diced
2 garlic cloves, diced
1 carrot, diced
1 stalk of celery, diced
Cook until tender
Then add:
2 lrg tomatoes, chopped or 1 can diced tomatoes with juice
1 can kidney beans, drained
1 can great white northern beans, drained
1 can black beans, drained
1 can pinto beans, drained
1 can of your favorite chili
Stir. Heat through. Careful it can get pretty hot. Serve with your favorite bread or with chips. Can also top with cheese or sour cream.
