I have changed the original recipe up a bit. But the original recipe came from my friend Yvonne.
3/4 C. sugar
1/2 C. oil
1/2 C. milk
2 tsp. vanilla
2 C. flour (1/2 wheat, 1/2 white)
2 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
2 C. grated carrots, (I just chopped mine up in my little food processor)
1/2 C. apple, chopped
1/2 C. coconut
1/2 C. dried fruit of your choice (I used dried cherries)
Mix all ingredients in a large bowl. Spoon into greased muffin cups. Cook in a 350 degree oven for 20-25 minutes, or until knife comes out clean.
