Fried Tators

My Father in Law gave me a great tip for cooking Hash browns or home made fries. Cut them all up, microwave them before frying them. It makes them crunchy on the outside and soft in the middle. It also speeds up the cooking process.

1 Tbsp. Olive Oil
3-4 potatoes, peeled and chopped
1/2 onion, chopped
Dash of salt and pepper
Mrs. Dash Seasoning (Your favorite flavor)

Place prepared potatoes on a plate and microwave for 4 minutes.
Put potatoes and onions into a preheated pan with Oil.
Fry until done.
Sprinkle with S&P and seasonings. 
Serve with Ketchup or Salsa.
