I made these this morning and they were devilishly good. I had to put them away in the freezer before I ate them all. They were super moist!
Cream together in a large bowl:
3/4 C. sugar
1/2 C. butter
1 C. mashed bananas
3/4 C. milk mixed with 1 Tbsp.vinegar (let vinegar sit for 2 minutes in milk before pouring in)
2 C. flour (1 C. wheat, 1 C. white)
1 tsp. baking powder
1 tsp. salt
1/2 C. nut of choice
Pour in greased muffin tin. Makes about 12 large muffins.
Bake at 350 degrees for 20-25 minutes or until knife comes out clean.
