In a pot on the stove add:
1 Tbsp. oil
heat
1/2 C. onion, diced
heat until onion is translucent
1 C. salsa
3 C. rice
6 C. chicken broth (you can use water and 1 chicken bullion cube)
Bring to a boil.
Cover and cook for amount of time it says on the back of the rice package.
White rice: about 20 minutes
Brown rice: about 45 minutes
Fluff with a fork and serve as a side dish to enchiladas, tacos, etc.
Can add 2 C. ground beef.
